These birds are not of the conventional Cornish breed, and there are some key differences to note. Our heritage cross birds are usually smaller, producing smaller cuts of meat. They also have open pasture to roam, which keeps the chickens healthier and stronger, giving the meat more texture. We also go the extra mile to feed our birds an organic, local, diverse grain and bean blend, that we soak, ferment, and cook for our birds to increase digestion and nutrition absorption in our birds. You heard that right, we cook for our chickens!

Cooking Tips:

1. Don't overcook! This is especially important for quick cooking methods like oven roasting, pan frying, or grilling. Use a food thermometer and stop when the chicken reaching 165 degrees.

2. Adjust cooking time to the weight of your chicken! Recipe cooking time is based on the weight in the recipe, so double check with your weights because our chickens tend to be smaller than conventional birds.

3. Baste or cook with liquids! We can't recommend cooking methods like slow and pressure cooking! These liquid cooking methods always come out incredibly tender! If you're using a quick cooking method, make sure to baste with juices, broth or butter every few minutes to increase tenderness.

Our chickens are always able to access extensive outdoor pasture paddocks to forage plants outside. During the winter they have a large barn they can also access to escape the cold. In the summer they have a number of portable houses. The portable houses are used so we can move the hens every few days to an entirely, new fresh swath of pasture for them to eat. Since domesticated poultry cannot live on pasture forages alone, our poultry are also fed certified organic grains (such as wheat, corn, flax, oats, triticale, barley, depending on season & availability). We carefully source our grains from certified organic farmers in our region and mix the feed in small-batches directly on the farm.
