Boar Shoulder Roast

Mint Creek’s herd of sows and boars include heritage breeds such as Mangalitsa, Hampshire, Berkshire, Duroc, Gloucestershire Old Spot, and White Chester. All are raised on our Certified-Organic Illinois prairie pasture. In addition to their pasture foraging, our hogs’ diet is supplemented with Certified-Organic grains and cooked beans. These are sourced locally (mostly from Janie’s Mill). This nutrient-dense feed is carefully sourced and mixed in small batches on site. Depending on season, ingredients in feed include Certified-Organic soybeans, black beans, yellow, red, or white corn, red wheat, winter wheat, flax seeds, sunflower seeds, oats, rye, hemp seed, barley, and triticale. The boars live their full life cycle here at the farm and we bring them to slaughter at the only Certified-Organic butcher in Illinois (Eureka Locker). To optimize tenderness, digestibility, and nutrient density, our heritage boar is dry-aged five or six days.
