Meat cuts will vary based on what is seasonal and surplus at the farm. We work really hard so that our CSA includes a range of cuts; from premium cuts (like chops, loins, and steaks) to more humble, braising, or ground cuts (like osso buco or stew meats). Occasional offerings of rustic sausages and organically smoked & cured bacon will also be included, all free of nitrates and featuring certified-organic spices.

Our laying hens are free to roam the pastures, eating bugs and grass, as well as a diverse mix of organic grains & legumes. We use regenerative, rotational-grazing practices on our organically-certified, Illinois farm.
